Holiday Recipe: Orange-Sage Sweet Potatoes

Long-time San Marino resident and volunteer Liz Kneier shares her recipe for orange-sage sweet potatoes.

Everyone has their go-to holiday recipes and San Marino resident Liz Kneier is no exception. Kneier and her husband, , will be hosting Thanksgiving for over 20 people at their home this year, so you could say Liz is somewhat of a pro when it comes to entertaining.

Orange-Sage Sweet Potatoes – Serves 10-12

4 pounds sweet potatoes, peeled and cut into ¼ inch thick slices

¼ cup frozen orange juice concentrate, thawed

¼ cup water

3 tablespoons packed brown sugar

1 ½ teaspoons salt

½ teaspoon dried sage leaf (crushed)

½ teaspoon dried thyme (crushed)

2 tablespoons butter

4 slices of bacon…cooked and crumbled

Place sweet potato slices in a 5-6 quart slow cooker. In a small bowl stir together orange juice, water, brown sugar, salt, the dried sage and thyme. Pour over sweet potatoes; toss to coat, and dot with butter. Cover and cook on low-heat setting for 5-6 hours. Before serving, stir potatoes and sprinkle with bacon.
